Paleo Pumpkin Bread

This loaf is super moist and fluffy, with the perfect amount of chocolate chips in every bite :)




THE RECIPE yields: 9-10 ish slices

prep time: 10 min

cook time: 1 hr 10 min

total time (including cooling): 1 hr 40 min

Ingredients:

1/4 cup melted coconut oil

2 eggs

1/3 cup coconut sugar

2 tbsp maple syrup

1/2 cup non dairy milk

1 tsp vanilla

1 cup pumpkin purée

1 1/2 cups almond flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tbsp pumpkin pie spice

1/2 cup chocolate chips

Instructions:

1. Preheat oven to 350 F and line a loaf pan with parchment paper, set aside

2. In a large bowl mix together the coconut oil, eggs, coconut sugar, maple syrup, non-dairy milk, vanilla, and pumpkin purée

3. Then add in the almond flour, baking soda, baking powder, salt, and pumpkin pie spice

4. Combine in the chocolate chips and pour the batter into the loaf pan (I topped mine with a few more chocolate chips), bake in the oven for 1 hour 5 min-1 hour 10 min, let cool for 20, remove from the pan and slice into 10 pieces, and enjoy!
