They’re soft, and a tad chewy, and basically taste like a bowl of lemon blueberry pancakes🥞 (if you saw my hand randomly shake in the last clip no u didn’t;))
THE RECIPE:
yields: 1 ramekin
prep time: 10 min
cook time: 30 min
total time (including cooling): 40 min
blend together:
1/2 cup gf rolled oats
1/2-1 tbsp lemon juice
1/2-1 tsp lemon zest
1/2 tsp baking soda
1 tsp baking powder
A pinch of salt
A dash of vanilla
1-2 tbsp maple syrup
2 tbsp/ 1 scoop protein powder
3/4 cup + 1 tbsp non dairy milk
2 tbsp chia seeds
pour half of mixture into a greased ramekin and add in a couple blueberries and optionally some white/lemon chocolate (I used @loving_earth lemon cheesecake chocolate). add the other half of the batter on top with some more blueberries and chocolate, then bake in the oven for 27-31 mins, top with lemon zest/ nut butter, and enjoy!
