These are amazing with thick, 2-ingredient pb caramel on top plus they're fudgy and extremely addictive
THE RECIPE:
yields: 12 brownies
prep time: 10 min
cook time: 30 min
total time (including cooling): 50 min
Ingredients:
For brownies:
2 tbsp melted coconut oil (can sub other)
2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water, mix, and let sit for 10 min)
1/4 cup peanut butter
1 tsp vanilla
1/2 cup coconut sugar
3/4 cup almond flour
1/4 cup cacao powder
1 tsp baking soda
1/2 tsp salt
1/3 cup chocolate chips
For peanut butter caramel:
7 dates (soaked in hot water for 5-10 min, then drained)
1/2 cup pb
Instructions:
1. Preheat oven to 350 F and line or grease an 8x8 baking tin
2. A large bowl mix together the oil, flax eggs, peanut butter, vanilla, and coconut sugar
3. Then add in the almond flour, cacao powder, baking soda, and salt. Then add in the chocolate chips.
4. Pour the batter into the pan and bake for 30 min
5. For the pb caramel: blend together the dates and peanut butter until smooth then spread over the brownies with a spatula
6. Wait 10-15 min until cooled and slice, enjoy!
