Healthy Oatmeal Banana Chocolate Chip Muffins (vegan + gf + nut free)

These Healthy Banana Oatmeal Chcoolate Chip Muffins that are vegan + gf + nut free!





THE RECIPE: yields: 12 muffins

prep time: 10 min

cook time: 25 min

total time (including cooling): 45 min

Ingredients:

1 flax egg (1 tbsp ground flaxseed + 3 tbsp water, mix, + let sit for 10 min, can sub normal or chia egg)

1/4 cup melted coconut oil

2 large mashed bananas

1 tsp vanilla

1/3 cup coconut sugar

1/4 cup maple syrup/honey

1 cup gf rolled oats

1 cup gf oat flour (1 cup blended gf oats)

1 tsp baking powder

1 tsp baking soda

1 tsp cinnamon

1/2 tsp salt

1/2 cup chocolate chips

Instructions:

1. Preheat oven to 350 F and grease a cupcake tin, set aside

2. In a large bowl combine the flax egg, coconut oil, bananas, vanilla, coconut sugar, and maple syrup

3. Then add in the oats, oat flour, baking powder, baking soda, cinnamon, and salt

4. Stir in the chocolate chips and spread the batter between the cupcake tins (recipe makes 10-12), bake in the oven for 24-25 minutes, let cool for 10, and serve with toppings of choice! (I like @jojoschocolatebark use the link in my bio and code KAYLEE10 for 10% off this is the pb flavor!
