These Healthy Matcha Oatmeal Chocolate Chip Cookies are chewy, crisp, and the perfect lil pick me up treat!!
THE RECIPE:
yields: 20 cookies
prep time: 10 min
cook time: 10 min
total time (including cooling): 30 min
Ingredients:
1/4 cup melted coconut oil
1 flax egg (1 tbsp ground flax + 3 tbsp water, mix & let sit for 10 minutes)
1/3 cup + 1 tbsp coconut sugar
3 tbsp maple syrup
1 tsp vanilla
1 cup gf oat flour (1 cup blended gf oats)
2/3 cup gf oats
1/4 cup + 1 tbsp coconut flour
1/2 tsp salt
1 tsp baking soda
3 1/2 tsp matcha powder (I used @heapwellsuperfoods !)
1/2 cup chocolate chips
Instructions:
1. Preheat oven to 350 F and line or grease 1-2 cookie sheets, set aside
2. In a large bowl mix together the coconut oil, flax egg, coconut sugar, maple syrup, and vanilla
3. Then add in the oat flour, oats, salt, baking soda, and matcha powder. Then add in the chocolate chips
4. Using a small/medium cookie scoop, place dough onto baking sheets and bake for 10-11 min, let cool for 10, and enjoy!
