Healthy Date Sweetened Oatmeal Chocolate Chip Cookies (vegan, gf, + nut free)

they’re fluffy and chewy with an amazing, not too overly sweet flavor from the dates


they’re also filled with chocolate chips and amazing-for-you, energy-inducing ingredients from the dates, flaxseed, and oats but u would never guess that they’re healthy


i’m not gonna lie i could eat like 10 of these in one sitting;)





THE RECIPE:

yields 14 cookies

prep time: 10 min

cook time: 11 min

total time (including cooling): 31 min

ingredients

1/4 cup melted coconut oil

2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water, mix, and let sit for 5 min)

1/2 cup @nunature_superfoods date spread (or make your own by blending abt 7 soaked and drained dates until smooth)

1 tsp vanilla

1 cup gf oat flour (1 cup finely blended gf oats)

3/4 cup gf oats

1 tsp baking soda

1/2 tsp salt

1/2 cup chocolate chips

instructions

*preheat oven to 350 F and line or grease a baking sheet, set aside

*in a large bowl mix together the coconut oil, flax eggs, date butter, and vanilla

*add in the oat flour, oats, baking soda, and salt. then stir in the chocolate chips

*using a small/medium cookie scoop, place the batter evenly onto the cookie sheet, bake in the oven for 11 min, let cool for 10, and enjoy!
