Healthy Copycat Reese’s Peanut Butter Trees (vegan + gf)

They’re simple, only 6 ingredients, + life changing! I love me a good ol’ normal Reese’s, but these babies are made with whole ingredients that you probably have at your house :)





THE RECIPE:

yields: 14 trees

prep time: 15 min

freeze time: 25 min

total time (including freezing): 20 min

Ingredients:

3 tbsp melted coconut oil

1/2 cup creamy peanut butter

3 tbsp maple syrup

1/2 tsp salt

1/2 cup coconut flour

For the coating:

2/3 cup chocolate chips

1 1/2 tbsp coconut oil

Instructions:

1. Prepare a cookie sheet, lined, and a cooling rack on the side

2. In a medium bowl mix together the coconut oil, peanut butter, and maple syrup

3. Add in the salt and coconut flour and stir until a dough-ish mixture forms

4. Combine all of the dough into a ball and flatten it on the lined cookie sheet so it’s about 1/2 an inch thick, freeze for 7-10 minutes

5. Remove from the freezer and take a small tree cookie cutter, cut out as many mini trees as you can (mine made 14) and place them back onto the cookie sheet, freeze while you melt the chocolate

6. For the topping: melt the chocolate in 30 second increments, whisking in between, until it is smooth

7. Place the mini trees onto the cooling rack and place the cooling rack back onto the cookie sheet. Then pour the melted chocolate over each one (you can use a spoon to spread the topping a little more on each one, if you by chance run out, you can either only coat the bottoms of some and give them a drizzle in chocolate or squeeze some of the chocolate from the lined sheet back into the bowl) place in the freezer again for 15 minutes, and enjoy! (Keep refrigerated)
