Date Sweetened Chocolate Chip Cookies (paleo + vegan)

soft, chewy, and ridiculously simple


treats sweetened with dates got me feelin some typa wayy. they give desserts the perfect amount of chewiness and sweetness and are all around ADDICTIVE





THE RECIPE:

yields: around 18 cookies

prep time: 10 min

cook time: 13 min

total time (including cooling): 33 min

ingredients:

2 flax eggs (2 tbsp ground flaxseed + 6 tbsp water, mix, and let sit for 5 min)

1/4 cup melted coconut oil

1/2 cup date butter (can use store bought -i used @ - or make your own by blending abt 7 soaked and drained dates until smooth)

1 tsp vanilla

1 1/2 cup almond flour

1 tsp baking soda

1 tsp salt

1/2 cup chocolate chips

instructions:

*preheat oven to 350 F and line or grease two baking sheets, set aside

*in a large bowl mix together the flax egg, coconut oil, date butter, and vanilla

*add in the almond flour, baking soda, and salt. then add in the chocolate chips

*using a small/medium cookie scoop evenly place the dough onto the cookie sheets, bake for 13-15 min, let cool for 10, and enjoy!
