Cookies and Cream Truffles (vegan, gf, + nut free)

I live for sweet treats that I can whip up in 10 minutes or less and these babies are perfect for that. They're sweet, simple, and super flavorful!




THE RECIPE:

yields: 12 truffles

prep time: 5 min

total time (including cooling): 10 min

Ingredients:

2 tbsp melted coconut oil

1/4 cup coconut sugar

2 tbsp maple syrup

1/4 cup sunflower butter

A dash of vanilla

2/3 cup gf oat flour (2/3 cup blended gf oats)

1/3 cup cacao powder/cocoa powder

A pinch of salt

For the topping:

2/3 cup vegan white chocolate

1 1/2 tbsp coconut oil

A tiny bit of crumbled cookie to top (optional)

Instructions:

1. In a medium bowl mix together the Coconut oil, coconut sugar, maple syrup, sunflower butter, and vanilla

2. Then add in the oat flour, cacao powder, and salt and roll the dough into balls

3. For the topping: Melt the chocolate and coconut oil in the microwave in 30 second increments, mixing in between, until smooth

4. Pour the white chocolate evenly over the truffles and top with a little bit of crumbled cookie, let chocolate harden, and enjoy!
